Less Sugar Sugar Cookies

Ingredients

  • 1½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ cup butter, softened
  • ½ cup sugar
  • 1 egg white
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 375o F.
  2. Sift dry ingredients together.
  3. In a large mixing bowl, mix butter and sugar until creamy.
  4. Add egg white and vanilla to wet mix, blend well.
  5. Gradually add dry to wet ingredients.
  6. Roll onto parchment paper to make a log.
  7. Refrigerate for at least an hour.
  8. Remove from fridge, remove parchment paper, cut into 1/4″ slices.
  9. Place on parchment paper on cookie sheet.
  10. Bake until edges are lightly golden, 8 to 10 minutes.
  11. Cool on a wire rack until completely cooled.

Zero Sugar Decorating Ideas

  1. Lightly brush log with egg white, then roll in nuts.
  2. Add chopped dry apricots to batter, brush log with egg white, roll in crushed nuts (try pistachio!), then cut into slices.
  3. Dust with cocoa before baking.
  4. Dust with blenderized freeze dried fruit (fruit dust).
  5. Stamp with cocoa or fruit dust.
  6. Drizzle with melted chocolate (no sugar added, of course.)
  7. Instead of vanilla, use lemon juice and add lemon zest. Brush log with egg white and lemon zest mixed in.
