Basic Granola

Ingredients

  • 4 cups oats
  • 1/2 cup almonds, raw
  • 1/2 cup walnuts
  • 1/2 cup pumpkin seeds, raw
  • 3 tsp cinnamon
  • 1/2 cup unsweetened coconut flakes
  • 1/3 cup maple syrup
  • 1/3 cup coconut oil or avocado oil

After baked and cooled, add:

  • 1/2 cup raisins
  • 1/2 cup dried cherries, chopped dates, or other dried fruits, unsweetened (optional)

Instructions

  1. Preheat oven to 350 degrees F.
  2. Combine oats, almonds, walnuts, pumpkin seeds, coconut flakes, and cinnamon in a large bowl and stir to combine. Set aside.
  3. In a microwaveable bowl combine coconut oil and maple syrup; microwave on high for 30 seconds or until coconut oil is melted.
  4. Stir then pour over the top of dry mixture.
  5. Mix well to coat evenly.
  6. Spread granola in a 8″x12″ ish pan so granola is a couple inches thick.
  7. Bake for 25 minutes without stirring (this allows for clusters rather than loose granola).
  8. Rotate pan, bake another 20 minutes.
  9. Remove from oven and allow to cool completely. Granola will get crispy up as it cools. 
  10. Mix in dried fruit and raisins after cooled.
  11. Store in an airtight container.

Hint: Sprinkle granola over yogurt with berries…

Retail granola with lesser-quality ingredients costs approximately $5 per cup.
