Cheesy Pumpkin Brownies

Zero flour, minimal effort, and a crowd pleaser with this easy dessert recipe!
Can you believe the brownie is made with Cocoa, Pumpkin and Peanut Butter?

Ingredients

  • 1 cup 100% canned pumpkin
  • 1 cup 100% peanut butter, no sugar
  • 3 eggs
  • ½ cup pure maple syrup
  • 3 dates pureed
  • 1 tsp pure vanilla
  • ½ cup cocoa powder
  • ½ tsp baking soda
  • Pinch salt

Cheese Swirl Filling

  • 4 oz. softened cream cheese
  • ½ egg yolk
  • 1 tbsp Maple Syrup
  • 6 drops fresh lemon juice
  • ¼ tsp pure vanilla

Instructions

  1. Blend everything except cocoa in a large bowl.
  2. Gently fold in the cocoa.
  3. In a separate small bowl, whip all the cheese swirl ingredients.
  4. Put parchment paper in 8×8 pan.
  5. Fill pan with ¾ brownie batter.
  6. Drop spoonfuls of cheese filling around top.
  7. Swirl the cheese filling into brownie batter.
  8. Cover with remaining brownie batter.
  9. Bake for 25-30 minutes until toothpick inserted comes out clean.
