Quick & Easy Oat Waffles

These waffles are made from simple ingredients without added sugar, flour, butter, seed oil, or preservatives.

Ingredients

  • 2 cups 100% rolled oats
  • 2 tsp baking powder
  • pinch salt
  • 1 tbsp maple syrup
  • 2 eggs
  • 1 cup milk
  • 1/3 cup coconut oil, melted
  • 1 tsp pure vanilla extract

Instructions

  1. Mix all ingredients in blender for 1-3 minutes until smooth and well blended.
  2. Preheat waffle iron.
  3. Pour batter onto hot waffle iron starting in the center.
  4. Spread to edges of iron with silicon spatula if necessary.
  5. Close waffle iron and bake until green light is on (or however your waffle iron works.)
  6. Remove from heat and eat!

Blueberry-Cranberry Syrup

  • 1 cup fresh blueberries (or frozen)
  • 1/2 cup fresh cranberries (or frozen)
  • 1-2 tbsp maple syrup (or honey)

Instructions

  1. Warm berries and syrup in a small saucepan on low until the berries open up and get saucy.
