Gramma Kim’s Blueberry Muffins

Preheat oven to 375o

Ingredients

  • ¼ lb. Butter (1 stick)
  • 1/2 cup Coconut Sugar
  • 2 Eggs
  • 2 cups Flour Total =
    1 cup all purpose flour
    + 1 cup whole wheat flour
    + 1/2 cup coconut flour
  • 1 tsp wheat germ
  • 2 Tsp. Baking Powder
  • ½ cup Milk
  • 1 Tsp. Vanilla
  • 1 cup Blueberries (fresh or frozen, large or small)
  • 1 Tbsp Whole Oats

Cream together soft butter and sugar.
Add eggs, blending one at a time.
Add 1 cup flour, gently blend. Do not over-mix.
Add half the milk, gently blend.
Add rest of flour and baking powder, gently blend.
Add rest of milk and vanilla, gently blend.
Add blueberries, gently blend.
Spray muffin tins (12) or add paper baking cups. Fill with batter
Sprinkle tops with sugar and cinnamon

Bake approx. 30 minutes.
